Healthy Blueberry Muffins

Ingredients

  • 1 ⅓ cups all purpose flour
  • 1 cup quick or old-fashioned oats
  • ¼ cup brown sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 cup skim milk
  • 1 egg, beaten
  • 3 tbsp vegetable or canola oil
  • 1 cup fresh blueberries

Steps

  1. Preheat the oven to 425°F.
  2. Grease a muffin tin or line it with cupcake liners.
  3. Mix the flour, oats, brown sugar, baking powder, salt, and cinnamon in a large bowl.
  4. Add in the milk, egg, and oil and stir until evenly moistened.
  5. Gently fold in the blueberries.
  6. Fill each muffin cup ¾ of the way full.
  7. Bake muffins for 25-30 minutes, until golden brown and a toothpick inserted into a muffin comes out clean.
  8. Remove the muffins from the oven and transfer immediately to a wire rack and let cool.
  9. Serve warm with jam or butter.
