Healthy Blueberry Muffins
Ingredients
- 1 ⅓ cups all purpose flour
- 1 cup quick or old-fashioned oats
- ¼ cup brown sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- 1 cup skim milk
- 1 egg, beaten
- 3 tbsp vegetable or canola oil
- 1 cup fresh blueberries
Steps
- Preheat the oven to 425°F.
- Grease a muffin tin or line it with cupcake liners.
- Mix the flour, oats, brown sugar, baking powder, salt, and cinnamon in a large bowl.
- Add in the milk, egg, and oil and stir until evenly moistened.
- Gently fold in the blueberries.
- Fill each muffin cup ¾ of the way full.
- Bake muffins for 25-30 minutes, until golden brown and a toothpick inserted into a muffin comes out clean.
- Remove the muffins from the oven and transfer immediately to a wire rack and let cool.
- Serve warm with jam or butter.
