You can easily replace the blueberries in this recipe with pretty much any other fruit you want. I'd recommend other berries, bananas, or apples, but you do you.

You can also add ½ tsp ground ginger to the egg mixture if you want to add a little something extra. Play around with other common dessert spices too! This is a dessert masquerading as breakfast, after all.

Blueberry French Toast Bake


  • 1 loaf french bread, ideally a day old
  • 6 eggs
  • 1 cup packed brown sugar
  • 2 cups milk
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • ¼ cup plus 1 tbsp maple syrup
  • 2 cups blueberries


  1. Preheat the oven to 350°F.
  2. Slice the bread into 1 to 2 inch cubes
  3. In a medium bowl, whisk together the eggs, sugar, milk, vanilla, cinnamon, and 1 tbsp maple syrup.
  4. Grease a 9"x13" casserole dish. Place the bread cubes and blueberries into the dish.
  5. Pour the egg mixture over the bread and blueberries and stir to combine and coat evenly.
  6. Drizzle the remaining ¼ cup maple syrup over the top of the bread mixture.
  7. Bake fore 45 minutes or until golden brown and cooked through.
  8. Serve warm with additional syrup, whipped cream, powdered sugar, or whatever else your heart desires. Now is not the time to be healthy.
