A spin on a snickerdoodle cookie that really feels like the holidays.

If you're unsure of how much nutmeg you want to use, start with ½ tsp of nutmeg in your cookie dough the first time you make this recipe, then decide if you want it more or less nutmeg-y for future iterations.

Nutmeg Noels

  • ½ cup (1 stick) unsalted butter
  • ⅓ cup sugar
  • 1 egg
  • ¼ tsp salt
  • ½ tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ - 1 tsp nutmeg (depending on your personal preference), plus additional for coating
  • Multiple colors of sugar sprinkles
  • Cinnamon, to taste

  1. Place a couple of tablespoons of each color of sugar sprinkles in its own small bowl (or combine a couple of colors into one bowl for multi-colored cookies), then sprinkle in a bit of cinnamon and nutmeg to taste (I usually use about ½ tsp of each per bowl). Stir the sugar, cinnamon, and nutmeg together in each bowl, then set aside.
  2. Preheat the oven to 400F.
  3. In a medium bowl, mix together the flour, baking soda, salt, and nutmeg.
  4. Cream the butter and sugar together in a stand mixer with the paddle attachment.
  5. Add the egg and vanilla to the butter and sugar mixture and mix at low speed until just evenly mixed.
  6. Add the flour mixture to the butter and sugar mixture ⅓ at a time and mix on low speed until evenly combined.
  7. Roll the dough into 1 inch balls and roll each ball in one of the sugar sprinkle mixtures to coat it completely. Place the dough balls 2 inches apart on ungreased or parchment-lined baking sheets.
  8. Flatten each dough ball just slightly with the bottom of a glass, then place the baking sheets in the oven and bake for 10-12 minutes or until the edges just start to turn lightly browned at the bottom.
  9. Transfer the cookies to a wire rack to cool, then enjoy!
