This recipe comes from my mom, Bonnie, and my aunt, Amy, and it's a perfect summer porch cocktail.Prairie Sunshine is a wildflower honey spirit that's similar to a white rum but distilled from mead (honey wine). If you don't have access to Prarie Sunshine, substitute with your favorite white rum and ½ oz of a floral mixer of your choice. Alternately, you can substitute with a different floral or honey-based clear liquor.
Solstice Sunshine
Ingredients
- 1.5 oz Prairie Sunshine from Quincy Street Distillery
- 1.5 oz ginger beer
- Juice from ½ a lime
Steps
- Pour the Prairie Sunshine over ice.
- Add the ginger beer.
- Add the lime juice.
- Serve with a lime wedge.
